Keerai bonda/ Spinach bonda

Bonda is famous as evening time snacks. Very famous in bangalore. One can see this spinach or any bond variety in little road side shops. It is nutritious as we add spinach though deep fried in oil.



In South India one can get spinach (palak) easily. There are vendors who sell it to your door steps. Spinach is good for health. The base I learnt from MIL and just added my idea to it. So here is the recipe...

Ingredients:

Kadalai mavu (besan flour) - 1 cup
Arisi flour (rice flour) - 1/2 cup
Maida (All purpose flour) - 1/4 cup
Spinach (palak) - 1/2 cup finely chopped
Onion - chopped (1 big)
Green chili - 2 finely chopped
Cooking soda - pinch
Butter - 1 tsp
Chili powder - 1 tsp
Salt - As required
Oil to fry

Method :

1) In a bowl take chopped onion, green chili, chili powder, salt, spinach and 1 tsp butter. Mix well.

2) Then add kadalai mavu, rice flour and maida together in the same bowl and mix well.

3) Sprinkle water little by little and mix well with no lumps.

4) Make it to a idly batter consistency.

5) Heat oil in a heavily bottomed pan. Make sure it is medium heat.

6) Once the oil is heat, take a tsp full of the mixed batter and drop it in hot oil. Once it puffs and comes to top (floating) take another tsp of batter and drop it in oil.

7) Once the oil sound subsides, take out and place it in a kitchen towel (kitchen paper).

8) Crispy and spicy spinach bond is ready..... Serve hot with coconut chutney or any of your wish.



Note:

1) If you want it colorful, just add a pinch of cooking color (red).

2) The batter should not be too watery or thin, if so add tsp of besan flour and mix.
