Mint and lemon chicken is one of the delicious dish suitable for a picnic and get-together. Lemon mint makes a great marinade for chicken breast. This is a dish u might be served in middle east. Its simple and flavorful and makes a great dinner.
Fresh lemon juice and mint are a must to get the exact recipe. I use lemon zest for seasoning, but i did not use it here. Will post separate recipe on how to make zest.
Ingredients:
Chicken Breast - 1/2 kg
Lemon juice - 3 tsp
Mint paste - 2 tsp (grind it to paste)
Turmeric powder - pinch
Masala powder - 1 tsp
Cumin powder - 1 tsp
Salt as required
Ginger garlic paste - 1 tsp
Water to boil chicken
Spring onions to garnish
Garlic powder to garnish
Dry methi leaves to garnish
Method:
1) Cut and clean chicken breast. Using a fork prick all over chicken.
2) In a bowl add water, salt, turmeric powder, 1 tsp lemon juice and bring to boil.
3) Remove the hot water from heat and add chicken to marinate.
4) Marinate for 15 mins. Then remove the chicken.
5) In a bowl mix masala powder, salt, ginger garlic paste, cumin powder, mint paste and 2 tsp lemon juice.
6) To this add marinated chicken, mix well.
7) Marinate for another 15 mins (minimum) covered either in refrigerator or room temperature.
8) Preheat oven to 420 F, place all the marinated chicken in baking plate, spray some olive oil over the chicken.
9) Once your oven is preheated, place the baking plate and set the timer to 20 mins.
10) After 20 mins, turn upside down all the pieces and again bake for 10 more mins at the same temperature.
11) Remove from oven and garnish with spring onions, garlic powder and dry methi leaves.
12) Serve hot with a lemon piece to make it more lemonisious....
Note:
1) Pricking chicken helps to absorb the juice inside.
2) If you like frying do it.
3) If you want a crispy chicken broil it for 5 mins. But at the same time reduce the second baking time to 5 mins.
