Home made Arisi flour (for all arisi flour recipes)

Rice flour is made from pacharisi (type of rice). It is one of the foundation ingredient. If any one in your house is in gluten free diet, this flour should be in your kitchen. Recipes like murukku, idiyappam, kolukattai and so many are made of this rice flour. It is cost effective when made in home.



This method is from my mom. She learnt it from her mother. Traditional way of preparing is blending in ural. But we have blender which helps us to do it in minutes  Mom always makes this at home. It has a unique taste. Method is simple. You can store it but in air tight container.

Ingredients:

Raw rice(pacharisi) - 1 cup (yeilds 1 or 1 1/2 cups flour)
Water for soaking
Blender
Pan

Method:

1) Soak a cup of raw rice for minimum 1 hour. (I do it for 3 hrs)

2) Drain the excess water. place a clean cloth on the table and spread the soaked rice. Let it dry.

3) I usually leave it overnight. But best is to do it in day because it dries up easily. Toss the rice every hour.

4) Blend until powder. Grind in batches to yield fine powder.

5) Heat a pan over medium heat. Add grind rice flour to the pan. Stir constantly.

6) In few minutes u will see the flour dried up. It should be pure white. The perfect stage is when you take a pinch, it should not stick together.

7) Cool down the flour. sieve it for fine powder. You can regrind the residue if you have any.

8) Store in a clean air tight container.

Note:

1) Can store it for months. Do not leave spoon in it.

2) Some like to refrigerate it. Make sure box is air tight.

3) Do not over roast the rice flour, it will become brown.

4) This type made rice flour have more capacity to absorb water. So while making recipe make sure you add little by little to get correct consistency.

5) Instead of white rice, one can also do it with brown rice. It has high nutritional fact.
